Milk Chocolate Brownies - Cook RepublicMilk chocolate is synonymous with childhood. Smeared cheeks, sticky fingers, sweet breath and foil wrappers stowed away in books as treasures. It is only after we grow up that we banish the treat of our childhood and become fancy pants with dainty little squares of the darkest chocolate we can find.

I love my dark chocolate as much as the average person and no more. But sometimes, very ocassionally I will crave a Cadbury milk chocolate bar. Because it takes me back to my childhood when we used to wake with the smell of chocolate enveloping us. Every single morning. Even in the weekends. You see we lived next to the Cadbury chocolate factory and the smell, oh the smell is something I miss even to this day! Yesterday I was nostalgic. It was baking day. And these brownies were begging to be baked with a touch of my nostalgia — milk chocolate. They are simple and straightforward. They are fudgy and oozing molten chocolate. They are perfect for washing down with a glass of creamy milk. Milk mustaches and chocolate smeared cheeks. Yes, that is what we all need once in a while.

MILK CHOCOLATE BROWNIES

A luscious fudgy brownie recipe that is velveteen personified with the creamy tones of milk chocolate and a smattering of macadamia bits.

Makes – 20 squares

Ingredients

200g salted butter
350g milk chocolate
3 eggs
120g brown sugar
50g plain flour
1 tablespoon cocoa powder
handful of crushed macadamias

Method

Preheat oven to 190C. Line a brownie pan or 8 inch square cake pan with baking paper.

In a heavy bottomed saucepan, melt the butter on low heat. Add milk chocolate and cook for a few minutes, stirring constantly until mixture is smooth and glossy. Remove from heat and set aside to cool.

In a large bowl, beat eggs and sugar with a hand blender until fluffy and pale. Add the flour and macadamia. Mix again. Add the chocolate butter mixture and cocoa powder. Beat for half a minute until just mixed.

Spoon brownie batter in the prepared pan and bake for approximately 30 to 35 minutes. Remove from oven and cool completely in the pan before removing and slicing into squares.
