You’ll need:

Turn up the heat to high and add the chicken.

Ingredients

1 pound boneless skinless chicken thighs, cut into bite-sized pieces

salt and pepper

2 tablespoons oil

2 cloves garlic, minced

2 slices ginger, minced

2 tablespoons Thai red curry paste

1 cup coconut milk

1 small bunch choy sum or baby bok choy

A handful of cilantro, chopped

Season the chicken with salt and pepper. Heat 2 tablespoons oil over medium high heat in a skillet. Add the garlic and ginger and fry for 1 minute, until fragrant.Red Curry Chicken, by thewoksoflife.com Add the curry paste and fry for another minute.

Is there a recipe for Red Curry Noodles without using coconut milk? | Yahoo Answers

You could try substituting the coconut milk for natural yogurt or creme fraiche which will give it a less sweet taste and is what I do when I make curry sometimes.
